Located in Munich‘s main train station, the fast slow-food restaurant creates an inspiring but relaxed eatery in the vital environment of the hub’s new sublevel. The restaurant includes two seating areas, a self-service, a beverage bar, an open, high-performance service station and a back-off area for cooking, cleaning and storage. The development of this prototype serves organic, slow prepared food for a range of customers, varying in type between daily commuters, local clients and long distance travellers.

Inspired by the food concept, the restaurant’s interior design allows for a pleasant, relaxed atmosphere amidst the bustling, noisy railway station. To feature its essential component the potato and provide a comforting location, layout and interiors complement in choice of materials and colours as well as in distribution of space.

The functional organization of the restaurant arises due to user requirements, organization of workflows and the constraint proportions. The interior finishes alter between dark toned industrial screed for floor and wall coverings and the rough sawn, whitewashed oak of the millwork providing a significant interior atmosphere that invites visitors to linger.
